Menu Planning Monday!

So here is my plan for this week, I have now been going to SNAP fitness, it works for my schedule because it is open 24 hrs a day....but I should be there more I figure if I write it out I will held accountable! I plan on working out every night for 1 hour(M-F). Despite recently hurting my leg, I think that I should be able to do this! On Saturday I will be cleaning someones house in the morning, and then right after since I will already be in workout clothes attire, I will head to the SNAP right by their house. On Sunday I am not going to commit to working out, if I do great if I don't I haven't failed right! Also, I will be cooking things and know what my point value will be, but I am mainly trying to cut down my portions! Going off of soda for lent was good for me, I don't crave one like I used to, I actually have only had a few, and went back to Diet Coke Caffeine Free! I would much rather have Iced Tea (unsweetened) or a PowerAde! We will see if that does anything to help me lose some of this weight!

Eggs, Oatmeal, Cereal, Toast, Pancakes, muffins~

BLT's, Salad, Grilled Cheese, Left Overs, Mac&Cheese

Snacks: Fruit and Yogurt Smoothie (3 pts), Homemade Granola, Yogurt, Pudding

Monday: Bow tie Pasta with Broccoli and Chicken
Tuesday: Ribs, Baked Potatoes, Green Beans
Wednesday: Tilapia, Rice and Peas
Thursday: Crockpot Vegetable Soup and cornbread
Friday: Sausage Green Beans and Potatoes
Saturday: Chicken with Rice and Broccoli Casserole
Sunday: Hamburger and Hot Dog Cookout, Potato Salad, Homemade Strawberry Shortcake

Would you be willing to share your shortcake recipe? My husband loves this and I never make it. His aunt makes an actual layer cake that is awesome, but I have never tried it.

Of course I will share! This is a really easy recipe, and you can tweek it if you want too....
It really doesn't take that much time to make and you bake for about 10min. @425.
You need 2C flour, 1T baking powder, 1/2 t salt, 3T sugar, 1 stick of butter, 2/3 C half and half (you could use milk)

Mix flour, baking powder, salt, sugar, and then cut in the butter. Mix in the milk. Fold the dough over and kneed a few times (flour your surface first, it will be sticky! But keep kneeding and it will hold together!)
I roll out the dough enough so that I can cut out about 8 round biscuits. Then I put them on my can brush the tops with butter or left over milk and then sprinkly with sugar.
Once baked....take out and serve warm with the strawberries and whipped cream!!! Always a hit here!

Also if you want a easy recipe, you can make the layer cake with angle food cake, it is a weight watcher recipe if you want I can try to find where I put that recipe....that one is super easy, because you basically are using all premade items!
